History:
Rice is one of the oldest food plants and is native to Southeast Asia.
The introduction in Italy seems to have first occurred in the south by the Arabs and the Spaniards.
Rice cultivation in the Po Delta dates back to 1400, although extensive and organized production only developed in the sixteenth century, thanks to the Este family, who managed to exploit the marshy lands that would otherwise have remained abandoned.

Baldo Igp is a good rice with large and consistent grains, highly recommended for creaming given its richness in starch and mineral salts.
Here is the Carnaroli IGP, a famous and prestigious variety that can keep cooking very well and is used in the best restaurants for excellent quality risottos.
The main characteristic common to these rices, which differentiates them from many others on the market, is that they are pure.
It means that all the grains have the same size and origin, without being mixed with other similar grains of other varieties: in this way you are sure to buy "all" Baldo.
They are also highly digestible rice.

Tips & Pairings:
Baldo rice produced in the Po Delta is the richest variety in mineral salts and has an excellent capacity to absorb seasonings.
Due to these characteristics, it is suitable for timbales and seasoned risottos.
