History:
The production area of the milk used to produce Casciotta d'Urbino Dop was originally the entire province of Pesaro and Urbino, in the Marche region. With the changes of July 2009, seven municipalities then passed to the province of Rimini and in three of these (Novafeltria, S. Leo and Sant'Agata Feltria) there are farms for the production of milk for the "casciotta". This is why it can be defined as a product with a Protected Designation of Origin of Emilia Romagna.
It is a cheese with very ancient origins, just think that since the 15th century a lot of attention was paid to the production and to the dairy economy; often this excellence was used as a bargaining chip with the Romans or with the Papal State. The first written documents tell of the presence of this casciotta at banquets and festive ceremonies organized by the nobles of the time; even Michelangelo, a great lover of this food, bought various estates in the area, so as to never run out of cheese.
As a certification of its quality and its close link with the territory, it received the prestigious DOP certification in 1996.

Casciotta d'Urbino Dop differs from many other simple caciottas thanks to its short maturation and the use of cow's milk and pecorino cheese, which ensures a product with a dry straw yellow color rind, with a soft and crumbly paste, with delicate aromas and refined and a sweet flavor with a slight sour note, with an aftertaste of green grass. Its quality is guaranteed by a strict production specification, which certifies its originality.
In the "half form" type, it will be delivered vacuum-packed and ready to be cut.
Tips & Pairings:
Casciotta d 'Urbino Dop is a very versatile cheese in the kitchen: ideal for stuffing with fresh pasta or for high-level snacks, perhaps in platters with local cold cuts and other aged cheeses. Also very good as a creaming, as a filling for soft bread or wraps or together with delicate jams, caramelized fruit, artisan desserts or honey.
We recommend combining light, soft wines, which do not affect and overwhelm the lightness of this product.
